Peanut Butter Protein Balls

Course Snack
Servings 8 Makes 8-10 balls

Ingredients
  

CAN BE FROZEN

  • 50g uncooked quinoa
  • 30g Peanut Butter (or almond butter)
  • Handful of Cashews- blended until a flour
  • 5-6 Pitted Dates
  • Teaspoon/half scoop Chocolate or Vanilla protein powder to taste (teaspoon)
  • Teaspoon coconut oil

Instructions
 

  • Boil Quinoa for 7-10 minutes, drain and rinse and leave to chill for 30 minutes
  • Blend cashews in Nutribullet until fine
  • Add quinoa, peanut butter, dates, coconut oil and protein powder
  • Blend and then roll into balls
  • If mixture is still sticky, blend and add more cashew flour
  • Chill balls in fridge for 10-20 minutes before servings

Notes

Can be kept in fridge for up to 5 days or better yet freeze them!
