

Peanut Butter Protein Balls
Ingredients
CAN BE FROZEN
- 50g uncooked quinoa
- 30g Peanut Butter (or almond butter)
- Handful of Cashews- blended until a flour
- 5-6 Pitted Dates
- Teaspoon/half scoop Chocolate or Vanilla protein powder to taste (teaspoon)
- Teaspoon coconut oil
Instructions
- Boil Quinoa for 7-10 minutes, drain and rinse and leave to chill for 30 minutes
- Blend cashews in Nutribullet until fine
- Add quinoa, peanut butter, dates, coconut oil and protein powder
- Blend and then roll into balls
- If mixture is still sticky, blend and add more cashew flour
- Chill balls in fridge for 10-20 minutes before servings
Notes
Can be kept in fridge for up to 5 days or better yet freeze them!
