Peanut Butter Protein Balls

Servings: 8 Makes 8-10 balls

Ingredients
  

CAN BE FROZEN
  • 50g uncooked quinoa
  • 30g Peanut Butter (or almond butter)
  • Handful of Cashews- blended until a flour
  • 5-6 Pitted Dates
  • Teaspoon/half scoop Chocolate or Vanilla protein powder to taste (teaspoon)
  • Teaspoon coconut oil

Method
 

  1. Boil Quinoa for 7-10 minutes, drain and rinse and leave to chill for 30 minutes
  2. Blend cashews in Nutribullet until fine
  3. Add quinoa, peanut butter, dates, coconut oil and protein powder
  4. Blend and then roll into balls
  5. If mixture is still sticky, blend and add more cashew flour
  6. Chill balls in fridge for 10-20 minutes before servings

Notes

Can be kept in fridge for up to 5 days or better yet freeze them!
