No- Cook Courgetti

Ingredients
  

  • 1 zucchini/courgette, skin peeled (optional to peel)
  • 2 cloves garlic, diced
  • 1 cup sun dried tomato, soaked
  • 1 tin of already chopped tomatoes
  • ¼ red onion, diced
  • 2 tbsp olive oil
  • ½ handful parsley, chopped
  • ½ handful basil
  • 1/3 cup olives, pitted (optional)
  • Pinch of sea salt
  • 1 tbsp Nutritional yeast flakes

Method
 

  1. Using a vegetable peeler or spiralizer, shave zucchini down to paper-thin noodles.
  2. In a food processor, pulse all other ingredients (and only half of the nutritional yeast) until smooth to create marinara sauce. Marinara sauce makes 2-3 servings which can be stored in freezer
  3. You can choose to warm the sauce and courgetti (not hot or steaming)
  4. Place zucchini noodles on a plate, top with marinara sauce, sprinkle the nutritional yeast flakes and serve.

Notes

Note: you can warm the courgetti or the sauce by blanching it quickly in boiling water, add it into the sauce pan to warm or  heat for 1 min in microwave.
