Method
- Using a vegetable peeler or spiralizer, shave zucchini down to paper-thin noodles.
- In a food processor, pulse all other ingredients (and only half of the nutritional yeast) until smooth to create marinara sauce. Marinara sauce makes 2-3 servings which can be stored in freezer
- You can choose to warm the sauce and courgetti (not hot or steaming)
- Place zucchini noodles on a plate, top with marinara sauce, sprinkle the nutritional yeast flakes and serve.
Notes
Note: you can warm the courgetti or the sauce by blanching it quickly in boiling water, add it into the sauce pan to warm or heat for 1 min in microwave.
