Gluten Free Crackers with Pesto, Warms Goats Cheese and Puy Lentils

Ingredients
  

  • Ryvita Crackers x4
  • 100g goats cheese
  • 1tbsp puy lentils
  • spread of pesto (like butter on each cracker)
  • garnish with rocket and red onion

Method
 

  1. Warm the grill
  2. Spread the pesto onto each cracker
  3. Divide the goats cheese into 4 portions and crumble onto each cracker and sprinkle the lentils
  4. Place crackers under grill for 30 seconds to 1 minute or until the cheese begins to brown.
  5. Add the garnish and eat!
