Vegan Roasted Garlic Flavoured Hummus

Ingredients
  

  • 1 head of garlic
  • 400g (14.1 oz.) tinned organic chickpeas (garbanzo beans)
  • 1 1/2 tbsp. extra virgin olive oil
  • 1/8 cup (30 ml/1 fl. oz.) water
  • 1/2 lemon, juiced
  • Pink Himalayan salt, to taste
  • Black pepper, to taste
  • Smoked paprika, to taste

Instructions
 

  • Preheat oven to 190°C (375°F).
  • Cut the top off the head of garlic so the cloves are slightly exposed.
  • Drizzle some olive oil over the cloves and then season with some salt and pepper.
  • Wrap the garlic head with foil and roast in the oven for about 1 hour.
  • Meanwhile, drain and rinse the chickpeas. Set aside.
  • Once the garlic is roasted, slide the cloves out of the peel and into a food processor.
  • Add all other ingredients to the processor.
  • Blend until completely mixed and smooth.
  • Season according to taste.
  • Store in refrigerator in an airtight container

Notes

Note: when serving with crackers, you can have 2x Ryvita crackers or 4x gluten free wholegrain oat crackers.
